Gin, Lime, Rhubarb Flip

A short and sweet post of an amazing little gem of a cocktail. I love a good flip and this one absolutely delivers if you’re craving something in the realm of sweet and tart. I would recommend making a double batch of the rhubarb simple syrup, its nice to have on hand and you’re guaranteed to have more than one of these cocktails.

Side note we have survived the first eight weeks of introducing two puppies into our family, which would account for all of the radio silence on the blog! All is well and we’re as busy as ever. Hopefully I can crank out some more recipes and baked goods in the near future, these little pups can be quite the distraction.

Rhubarb Simple Syrup

1 1/2 cups water

1 1/2 cups granulated sugar

4 cups chopped fresh rhubarb ( 1/2 inch pieces)

Combine rhubarb, sugar and water in a medium sauce pan. Bring to a boil, reduce heat to a slow simmer and sugar dissolves and rhubarb cooks down, around 15 minutes. Set aside to cool for 15 minutes, drain rhubarb through a fine mesh sieve and reserve the syrup.

Ingredients

2 oz gin

1 oz rhubarb simple syrup

3/4 oz fresh lime juice

1 egg white

sliced lime for garnish or rose petals

cubed ice

Preparation

Combine gin, simple syrup, lime and egg white into shaker. Shake vigorously for 45 seconds. Add ice, then shake for an additional 30 seconds. Strain into a coupe or standard rocks glass depending on your mood. Garnish with a thin slice of lime or dried rose petals, whatever suits your fancy.
